Valldolina Cava Brut Nature Reserva is produced with the three usual varieties Xarello, Macabeo, and Parellada, plus a unique added touch of Chardonnay to improve structure, mouthfeel, and finesse. After the first fermentation in steel tanks, it spends 24 months with lees contact, and later no sugar is added at disgorgement (brut nature). On the nose, an intense display of white fruit aromas is accompanied by notes of freshly baked pastries and hints of toasted almonds. The palate is fresh and lively with optimal carbonic integration and a persistent finish with mineral touches.

About Valldolina Cava Brut Nature Reserva

Valldolina Cava Brut Nature Reserva is an artisanal grower Cava from a certified organic vineyard led by winemaker Raimon Badell. The vineyard/cellar site dates back to 1729 and the winery was established by the family in 1998. It is not easy to find terroir typicity for an entry-level Cava but this humble sparkling wine delivers. It is produced with the three usual varieties Xarello, Macabeo, and Parellada, plus a unique added touch of Chardonnay to improve structure, mouthfeel, and finesse. After the first fermentation in steel tanks, it spends 24 months with lees contact (metodo tradicional), and later no sugar is added at disgorgement (brut nature). On the nose, an intense display of white fruit aromas is accompanied by notes of freshly baked pastries and hints of toasted almonds. The palate is fresh and lively with optimal carbonic integration and a persistent finish with mineral touches. The name was inspired by the geographical feature known as ‘doline’, a series of large and impressive holes that can appear in the argilo-calcareous soils due to the ancient erosive activity of water. This is a very unique characteristic of the Garraf Massif (Catalonia) on full display in the small town of Olesa de Bonesvalls (Penedès).

About Valldolina

Raimon Badell is making biodynamic and organic vintage Cava from his estate in Alt Penedès, which is located entirely within the national protected area of the Massís del Garraf. The grapes (Xarel·lo, Macabeu, Parellada, & Chardonnay) are hand-harvested and fermented in stainless steel, and the resulting wine undergoes a second fermentation in the bottle, where it then ages on its lees for more than 24 months. Raimon elaborates Valldolina Cavas with a zero dosage, thus qualifying it as Brut Nature, with less than 1 gr/L of residual sugar.

The name Valldolina [vai-doh-LEE-nah] is a description of the landscape. Dolines are depressions formed in areas that is rich in limestone soils (karst), while ‘vall’ is Catalan for valley. Thus, Valldolina = valley of dolines.
