ABOUT THE PRODUCER

About Togonidze’s Wine Saperavi Red

Togonidze’s Wine Saperavi Red is a full-bodied, rich, and elegant Georgian red wine made from the Saperavi grape. Produced in qvevri (clay amphora) with older-vine Saperavi from lower elevation plots for maximum ripening. The vineyard is adjacent to the Satlianiskhevi River, just outside the city of Telavi. The soil composition in Kakheti is referred to as “Cinnamonic” and is comprised of reddish, sandy, calcareous clays. The hue is a function of high iron content which also imparts a depth of flavor and rustic, earthy notes to the wines of this region. Winemaking follows traditional family practices employing non-irrigated, chemical-free production. This is a big and rich wine, with a dense tannic structure that still manages to be elegant. Notes of dark fruits, such as plums, black cherries, and boysenberries, mingle happily with baking spices and a hint of smokiness. Take your time with this bottle, giving it about 30 minutes after opening to breathe. Even better if you have time to decant, which will let this cuvée’s flavors shine.
