About Reserve Ammiq Winery
The Reserve Ammiq Winery is located in the Bekaa Valley, 900 meters above sea level, with an average yearly rainfall of 600 mm and 300 days of sunshine. It is known that more than any other factor, the quality of the grapes determines the quality of the wine. The strict control of yields inspires the estate’s methods to maintain the quality of the grapes and which part of them are 50 years old. Chemical fertilizers are never used in favor of organic fertilizer. Harvesting is done by hand. The vinification techniques employed at Reserve Ammiq combine the best of traditional methods and modern technology.
Peter Skaff, our winemaker, follows each step from the vines to the bottles. Meticulous about every step of the winemaking process, Reserve Ammiq only uses wild indigenous yeast present in the vineyard and stainless steel tanks equipped with computerized temperature control. The wines are aged 18 to 24 months in French and American oak barrels. These contribute to the unique expression of the terroir in the bottles.
