‘Giallo’ refers to the hyper-stylized, pulpy horror films that came out of Italy in the ’60s, ’70s, and ’80s. Giallo’s are my favorite thing to come out of Italy. My second favorite thing is the rugged and savage red wines of the Italian Alps. Giallo (the wine) is an homage to those wines. A blend of Teroldego, Nebbiolo, and Refosco from high elevation sites, Giallo is a brooding and perfumed beast that attacks you with concentrated spice and groovy texture. It’s sexy, hypnotic, and set to Italo Disco. Discerning swingers drink ‘Giallo.’

Methode Sauvage was started in 2013 by Chad Hinds.

We began, striving to find a voice for California Cabernet Franc and Chenin Blanc from all over the state.

In the Spring of 2018, we will begin planting a vineyard in the California Alps of Siskiyou County, using the permaculture methods laid out by Masanobu Fukuoka. In the spirit of this new project, we have begun experimenting with wine styles and varietals from the Alps of Europe.

We seek to make wine with a sense of place by employing no additives and removing no character.

We explore a diverse array of exceptional vineyard sites, with the goal of channeling terroir and showcasing California’s diversity.
