About Florez Wines Mousseux Pét-Nat

Florez Wines Mousseux Pét-Nat is a bubbly skin contact méthode ancestrale made with Chardonnay from Sonoma Mountain that calls for a good time. For this bubbly, the Chard rested on its skins for three days during a slow fermentation process before bottling a la méthode ancestrale. The Florèz Wines Mousseux Pét-Nat 2021 has just a touch of tannin, with plenty of apple juice and tangerine aromas.

About Florez Wines

Florèz Wines Founder James Jelks grew up in the Santa Cruz area and attended UC Davis. He worked in wineries worldwide for 10 years before returning home to Santa Cruz in 2017 to make a wine of his own. Jelks uses his grapes and grapes from organic, sustainable vineyards in the area. Florèz’s vineyards are always dry-farmed. Jelks only produces wine with native yeasts. He does not use additives in his wine. The only exception is a minimal amount of sulfur at bottling. And he does not filter any of their wines.

About the Winemaking

The grapes were destemmed and to rested for one night to allow the flavors and grape’s qualities to leach out of the ruptured skins. The juice was then fermented in stainless before being sent to neutral oak to allow a little roundness to develop sur lie. Unfined and unfiltered with no adjustments save for 15ppm SO2 added at bottling.
