About Domaine Gross

In the heart of Alsace, a few kilometers from Colmar, Domaine Gross is a family winery run by biodynamic culture. In the early 1980s, Rémy Gross took over from his parents at the estate, founded by his grandfather Louis Gross, a blacksmith by profession, then comprising 2.5 hectares of vines. In a family spirit and a constant concern for respecting traditions, Rémy and Vincent now cultivate a 10-hectare vineyard and vinify the entire harvest.

About the Vineyard

The entire vineyard is managed according to the principles of biodynamics and our primary objective is to produce wines with great aromatic expression. For this, the care given to the vine is carried out manually because the human hand allows a delicacy in each of the gestures.

The use of plants (nettles, horsetails, etc.) reinforces the action of sulfur and copper during treatments; biodynamic preparations (compost MT, 500, 501) enhance the soil and improve the development of the vine throughout the season.

A short pruning in winter makes it possible to reduce the load per vine and thus obtain very aromatic wines.

Finally, it is essential for us to understand the nature of the soils forming the terroir and the development of these soils requires plowing which improves and preserves microbial activity.

About the Winemaking

Harvesting is done exclusively by hand throughout the estate and selective sorting is carried out in the vineyard. The whole grape is transported to the cellar.

For direct-pressing wines, the harvest is loaded by gravity in order to preserve the integrity of the bunches. Slow pressing (between 6 and 18 hours depending on the cuvée) gently extracts the juice from each of the berries; the aromas of the grapes are thus preserved and will be expressed through great finesse.

For maceration wines, the whole and de-stemmed bunches are in contact with the juice; fermentation takes place for 3 weeks. This ancestral method allows us to produce wines without any input or sulfur; the aging is more or less long, between 6 and 12 months depending on the cuvées, in our oak tuns as well as in stainless steel barrels.

At the end of August, the wines are bottled, then stored in the cellars for a few months at least, or even several years for wines with long aging potential.
