About De Stefani Cabernet Sauvignon

The 2015 De Stefani Cabernet Sauvignon is the perfect representative of the winery. The fruit comes from the family’s Le Ronche estate located in Fossalta di Piave. This area is rich with clay and sees high temperatures in the summer to give it ample ripening. Low yields from careful vineyard management, create rich Cabernet fruit. Harvest happens around the beginning of October. Both the initial and malolactic fermentations happen in stainless steel. Then, aging takes place in French Allier oak barrique for 12 months. The final wine balances between fruit and spice. The body sees oak softness and gripping structure. Supple and complex flavors resound through the long finish.

About the De Stefani Winery

The family of De Stefani dates back to the later half of the 1800s. They have created wines of the utmost quality since the beginning. Today they are under the experience of the family’s 4th generation winemaker. The family began in Refrontolo, a small hilly village between the towns of Conegliano and Valdobbiadene. De Stefani has complete dedication to as natural production as possible. The estate is organic. They rely on natural yeasts for fermentation. Also, no sulfur additions or other additives. They now focus on the varietals that create incredible results in their unique terrain. Thriving from the local clay soils, the wines of De Stefani are stunning, true to type, and complex.
