About Biblia Chora
Situated on the southern slopes of Mount Pangeon in Kavala, 100km east of Thessaloniki. In 1998, the ideal soil and climatic conditions caught the attention of winemakers Vassilis Tsaktsarlis and Vangelis Gerovassiliou. They were inspired to create this privately owned vineyard which today encompasses 65 hectares at an altitude of 380 meters above sea level, drawing the eye to the Aegean Sea in the distance.
About Assyrtiko
Assyrtiko (also written Assyrtico or Asyrtiko) is arguably Greece’s most iconic wine grape variety. It is grown most famously on the volcanic island of Santorini in the Aegean sea.
It has developed a reputation as being a versatile grape variety. Wines are made in a multitude of styles, from fresh, minerally white wines to rich, nutty dessert wines known as Vinsanto. It is planted as far north as Drama in Greek Macedonia and is also occasionally seen in Retsina.
Assyrtiko is produced in a range of styles so recommended foods will vary depending on whether the wine is aged in oak or not (for instance). Nonetheless, the variety’s acidity makes it an ideal match for seafood such as oysters, shellfish, or fish. Greek-inspired dishes such as grilled or fried halloumi would be an idea too.
