Arnaldo Rossi Dodo Toscana Sangiovese is Arnaldo’s masterful creation of the perfect Tuscan Sangiovese wine. Hand collected from his personally owned vineyards, Arnaldo ferments the wine in wooden vats with indigenous yeasts, then ages the wines in small French oak barrels for 12 months and a further year in bottle before release. Aromas of aromatic herbs and candied red fruit prevail on the nose which are confirmed in the mouth enriched by a balanced tannin. Arnaldo makes just 800 bottles each year, weather permitting, and bottles Dodo in 1-liter bottles instead of the traditional 750ml.

About Arnaldo Rossi

Arnaldo Rossi is the owner of Taverna Pane e Vino, a restaurant and B&B in the touristy village of Cortona. For 17 years, Arnaldo searched out and introduced the best natural wines in his small eatery. He has always believed that in order to be able to better judge somebody else’s work it is necessary to experience that job firsthand. Therefore,  Arnaldo decided to produce his own wines. He has a tiny plot that he farms with diligence, often using biodynamic preparations and simple hand tools.  I would describe the size of the vineyard as “garden size” – very small but handled with absolute care.  His passion for natural wine is deep, so the small amount of wines he makes are as pure as can be.  Sangiovese is at the heart of course, with Trebbiano, Malvasia, and the occasional other grapes like Malvasia Nera, Aleatico, etc. He uses a combination of old oak barrels, stainless steel, resin, and anfora for vinification and aging.  All the wines are made with natural fermentation and without sulfur additions when possible.
